Recipe: Valentine's Red Velvet Cupcakes with Amaretto

Instead of a normal red velvet version of cupcakes, go for this amaretto-added option. The flavor of amaretto pairs so well with red velvet.

And of course, no cupcakes are complete on Valentine's Day without adorable Valentine's Day sprinkles.

Red Velvet Amaretto Cupcakes with Amaretto Cream Cheese Buttercream Frosting
INGREDIENTS
for the red velvet amaretto cupcakes
1 1/2 cups sugar
1/2 cup butter, softened
2 eggs
1 cup milk
1 1/2 tablespoons white vinegar
2 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
2 1/4 cups flour
1 teaspoon amaretto
1 1/2 tablespoons red food coloring

for the amaretto cream cheese buttercream frosting
1/4 cup butter, softened
8 ounces cream cheese, softened
1 teaspoon amaretto
2 1/2 cups powdered sugar

DIRECTIONS
Preheat the oven to 350°F.

Beat the sugar and butter together. Then, beat in the eggs. Set the bowl aside.

In a small bowl, combine milk and vinegar. Let sit for 10 minutes.

In another small bowl, combine the cocoa powder, baking soda, baking powder, and flour.

Add amaretto and food coloring to the milk mixture.

Take approximately 1/4 of the cocoa powder mixture and fully incorporate into the sugar mixture.

Then, add 1/3 of the milk mixture and fully mix into the sugar mixture.

Continue with the dry, wet pattern into the sugar mixture, ending in dry ingredients.

Spoon into greased cupcake tins and bake for about 20 minutes, until a toothpick comes out clean.

Meanwhile, make the amaretto cream cheese buttercream frosting. Beat the butter, cream cheese, and amaretto until fluffy. Then, add the powdered sugar, incorporating a little at a time (about 1/4 cup). Beat until desired texture and flavor.

Frost the cupcakes when they are cooled. Decorate as desired.

Makes 24 cupcakes.

Recipe: Valentine's Strawberry Shortcake Cupcakes

A quick and easy recipe from scratch for berry shortcake cupcakes. Yet the classic yellow cake batter can be substituted with a yellow cake mix or a butter cake mix. Likewise, the fresh whipped cream can be substituted with store-bought whipped cream. That makes these cupcakes as fastest and easiest as you need them to be for Valentine's Day dessert.

Shortcake Cupcakes with Strawberry Filling and Fresh Whipped Cream Topping
INGREDIENTS
for the shortcake cupcakes
1 1/2 cups flour
1 1/2 teaspoons baking powder
2 eggs
2/3 cup sugar
3/4 cup butter, melted
2 teaspoons vanilla extract
1/2 cup low-fat milk

for the strawberry filling
1 cup strawberries, frozen or fresh
2 tablespoons sugar

for the fresh whipped cream topping
1 cup heavy whipping cream
2 tablespoons sugar

DIRECTIONS
Preheat the oven to 350°F.

Whisk together the flour and baking powder. Set aside.

In a bowl, beat the eggs and sugar about 2 minutes, until light and foamy. Gradually pour in the butter and vanilla while mixing constantly.

Slowly add half the dry ingredient, and stir until just combined.

Add all of the milk mixing until just combined.

Last, add the rest of the dry ingredients, being careful not to overmix.

Spoon the batter into greased cupcake tins, or tins lined with cupcake liners.

Bake for 20-25 minutes until the centers of the cupcakes are clean when poked with a toothpick. Let cool.

Meanwhile, let the strawberries come to room temperature if frozen. Either using a food processor, or a sharp knife, cut the strawberries into very small pieces. Top with sugar, and set aside.

When the cupcakes have cooled, use a sharp knife to cut a cone-shaped hole down into the cupcake, removing the center; being careful not to cut the bottom. Continue with each cupcake.

Fill each cupcake with the strawberry mixture, and place in the fridge until serving. Do not let the cupcakes sit longer than half an hour because the juices will soak right through.

Using an electric mixer, mix the whipping cream and sugar until soft peaks form.

Top each cupcake with the whipped cream. Serve immediately.

Makes 24 cupcakes.

Recipe: Valentine's Chocolate Heart Cups on a Spoon

Mini Chocolate Heart Cups on a Spoon
INGREDIENTS
- dark chocolate (I used 75g per silicone mould but really, it all depends how large your mould is)
- mini marshmallows

DIRECTIONS
Find gorgeous teaspoons you plan to give to your closed ones as Valentine's Day gift. Next, find silicone heart-shaped mini cake moulds.

Break the chocolate up into pieces, and fill your silicone mould with it until it's almost full, but not with chocolate poking out over the sides.

Place chocolate filled silicone thing into the microwave on the outside of the spinning plate, and cook on high for about 40 seconds. Do keep watching it as all microwaves are different in power, and you don't want to end up with burnt chocolate.

Open the microwave and have a little poke about with a wooden toothpick. If the chocolate has melted down and left room for more chocolate, then add some more, and give it another 30 second blast.

Repeat the step in the paragraph above until the mould is full yet with about 3mm at the top of the mould free of chocolate.

Carefully remove the little silicone mould from the microwave — remember it could easily wobble and spill your molten chocolate. Leave on a plate, chocolate still in mould, to cool slightly.

When the chocolate is starting to re-set, pop your teaspoon into the middle of it and leave to fully cool and set at a 90 degree angle. If it's solid enough at this point then you won't have to hold the teaspoon up.

Pop some little marshmallows onto the top of the almost set chocolate. Leave to completely set until rock solid, at room temperature. Then remove from the silicone mould and wrap in cellophane packaging.

Write a little label with the suggestion that a gift receiver swirls the chocolate on a spoon in scalding milk until dissolved, and then drink until feeling very content.
